1 kilo fish, pieces
whole spices
3 cups of rice
6 onion, chopped
1/3 cup of Ghee
3 tbsp tomato paste
4 dried black Lemons
4 & 1/2 cups of boiling water
Fish seasoning: 5 tbsp garlic, 1/2 tbsp from
each cumin, salt, black & red pepper, turmeric
and Arabic spices
1/2 cup of Lemon juice
1/2 cup of minced coriander
Decoration: 2 roasted onion rings and minced

1. Dowse fish in the marinade, then store in the refrigerator for a good time. Fry the fish with oil
2. Melt the ghee in a pot, then fry the whole spices and onions. Stir until golden brown
3. Add the dried lemon and tomato paste, stir for 1 minute then add rice and stir for 5 minutes
4. Add water to the rice. Keep it over high heat until the water evaporates, then place the rice in the oven over moderate heat for an hour
5. Stir the rice, then transfer to the serving platter. Lay fish on top, decorate with fried onion and parsley, and serve
