Ingredients:
1 Deer (Ghazal) weighing 7 to 10 kilos
2 tbsp from each of vinegar and Turmeric, to rub
the deer
7 onions, chopped
1 garlic head, minced
9 cups of rice
1/2 tbsp from each of spises, turmeric, cinnamon
and black pepper
salt to taste
1 cup of oil
Cardamon and saffron

Stuffing ingredients:
cup of chickpeas, boiled
5 sliced onions
1/2 tbsp from each of Cardamon, black pepper
and cinnamon
3 tbsp Tomato paste
3 tbsp ghee

Method:
1- Clean the deer, then rub with vinegar and turmeric. Leave aside for an hour.
2- Heat oil in a large pot, then put the deer into. Turn it upside down many times until it changes color. Add onions, garlic and spices. Then move the content many times for 10 minutes.
3- Submerge the content with water, and leave until boiling, then cover the pot, and let the content simmer over low heat for 90 minutes, or until cooked.
4- Meanwhile, prepare the stuffing: melt the ghee in a pot then fry onions and chickpeas. Season the content and stir. Put the tomato paste over and stir for 10 minutes.
5- when the deer is done, season with cardamom and saffron. Stuff with half stuffing quantity. Place into hot oven for 30 minutes.
Put the rice in the serving tray. Place the deer over, then put the rest of the stuffing. (10-12 people).
