Ingredients:
5 Zubeidi fish
3 cups of rice, rinsed and drained
3 onion rings
1/4 cup of Ghee
Cooking Oil
5 whole grains from each of black pepper,
cinnamon, black Lomé, Cardamon and cloves
Stuffing Ingredients
1 onion, chopped- 1/4 tbsp from each of cinnamon,
black pepper, arabic spices, Turmeric,
dried black lemon ,salt to taste

Method:
1- Clean the fish. open from the back to the belly. Remove dirts and sprinkle with salt. Leave aside.
2- Mix the stuffing ingredients. Wash the fish and fill.
3- put the fish in a pot over heat. Submerge with water and add the whole spices.
4- remove the fish from water, when cooked (15 minutes).
5- put the onions in a pan without oil or ghee. When the color changes, add water and ghee gradually. Stir until lightly brown. Then remove half onions quantity.
6- put the rice over the fish and stir for 5 minutes, then add the fish broth (4&1/2 cups). Leave over high heat until the water evaporates, then lower the heat and leave until cooked.
7- sprinkle the fish with a little spices and fry with oil.
8- when the rice absorbs the fish broth, put the fish and the stuffing on the top, and let the content simmer over low heat for an hour.
