2 kilo of courgette
1/4 kilo of mincemeat
3 tbsp from each parsley, coriander
4 tbsp Corn flour + 1 cup of water
1/2 tbsp from each cinnamon, black pepper
1 cup of Egyptian rice
4 cup of yogurt
1 tbsp garlic clove, chopped
3 onions, chopped
1 tbsp of dried mint
salt to taste
1- Mix mincemeat with rice, spices, onions, garlic, parsley and coriander, then add the pine and stir.
2- Remove the courgettes> core, and fry with some oil, Then fill each courgette with the mincemeat mixture.
3- Arrange the courgettes in a pot then add some water (but do not submerge), then add salt and mint and let the content simmer over medium heat for 30 minutes.
4- Meanwhile, mix the corn flour with water, then mix yogurt with corn flour. After that put the yogurt over heat and stir. To dilute the yogurt, add the courgette boiling water (optional).
5- Add the Courgette to the yogurt , then let it simmer over low heat for 30 minutes. Stir once or twice only.
