Ingredients of Maleeh mixture:
2 Pieces of Maleeh (salted fish)
4 minced onions
1 tbsp garlic with ginger
1/2 tbsp of beans from Fenugreek, curry,
cumin and some of the curry leaves
1 tbsp of each Turmeric, beryani spices
1 bell Pepper and Tomato, minced
coriander and green pepper to taste
1/4 tbsp from each of red pepper, cinnamon,
black pepper and Cardamon
3 tbsp ghee

Ingredients to Rice:
4 cups of rice
6 cups of hot water
3 tbsp ghee
1 minced onion
Some of the curry leaves and cumin grains
Turmeric and salt to taste
1 chicken broth cube

Decoration: roasted nuts and parsley

Method:
1- Wash the fish many times to remove the salt. Boil for 10 minutes, then remove water and then boil again with new water for 30 minutes. Drain, wash again to remove the spines and the skin.
2- to prepare the maleeh: fry the grains with oil, then add garlic and ginger until roasted. Add tomato, parsley, bell pepper. Sprinkle spices over and stir for 5 minutes. throw in the maleeh and stir for 5 minutes
3- to prepare the rice: fry the cumin grains with oil. Add onions and the other ingredients. Stir and then add the rice. Mix well for 7 minutes then add water and leave over heat until the water evaporates
4- in a large oven tray, put the maleeh mixture, lay the rice over, then place into the oven for 30 minutes
5- turn upside down in the serving plate. Decorate with nuts and parsley
